Fernando Olea has been our go to expert since 2002 for the cuisine of the American Southwest and those of Mexico and all points South .

 

A Santa Fe legend and the creator of a series of Latin inspired restaurants over the past 20 years, ranging from casual venues like Bert’s Burger Bowl and Bert’s La Tacqueria, to his high end restaurants Encanto and Epazote. Then came Sazón, and the acknowledgement of his singular journey to define his culinary identity into a broader context.  He defines it as New World cuisine.

Fernando elevates one to a new perspective and understanding of the range of a modern culinary approach. His roots are Latin, but his quest has brought in many techniques, ingredients and executions that incorporate the culture of the New World. His food always surprises the palate, and achieves a balanced tapestry of unique flavors. It speaks to us in a culinary language that is uniquely “Olea”.

His 2022 James Beard award for best chef of the Southwest is an honor, but for Santa Fe and throughout the Southwest, Fernando endured long before they recognized his magic and dedication in New York City.
